Gluten Free Orange Cookies with Chocolate Glaze

Orange and Chocolate a Classic!
Orange and chocolate are one of the best combo’s ever. I was actually thinking about creating a completely different cookie. But then my friend gently pushed me in this direction. No complaints here as these turned out completely yummy. Slightly soft cookies and the orange flavor is in the cookie and also in the chocolate glaze. Double the flavor, double the fun.
Tip!
Save some orange zest to use as decoration once you’ve added the chocolate glaze to the cookies. It will add a pop of color to the cookies.
Swap Vanilla for Orange Cookies
This cookie is actually very similar to the vanilla cookie. And like I mentioned in that recipe it’s a simple recipe that you can easily adapt to add other flavors. The original recipe calls for coconut oil but I decided to swap it for ghee. And that gives the cookie a soft center. And then ofcourse swapped he vanilla flavoring for orange and chocolate. What other combinations should I try next? I’m open for suggestions.
Cookies or Cake?
I always like making a ton of different cookies for the Christmas table. Besides the fact that I love having options and they look good. They are also way smaller and feels lighter than eating cake. Which brings me to my next point. I want to make a bold suggestion, to cancel cake as dessert for Christmas. Let’s just do a variety of cookies and decrease the chance of accidentally stuffing yourself. Hear me out. It’s the perfect way to protect yourself. You still get to indulge in something sweet. But bitesize is the best way to go. It makes total sense.
Cookie Table:
Gluten Free Orange Cookies with Chocolate Glaze
Ingredients
Orange Cookie
- 1½ cup almond flour
- ½ cup arrowroot flour
- ½ tsp baking soda
- 1/3 cup ghee softened but not melted
- 1/3 cup maple syrup
- 1 tbsp orange zest
- 2 tbsp orange juice
Chocolate Glaze
- ¼ cup dark chocolate chips
- 1 tbsp orange zest
- 2 tbsp maple syrup
Instructions
- Preheat the oven to 160°C.
- Mix all the dry ingredients in a bowl together.
- Mix the wet ingredients including the softened ghee together and transfer to the dry ingredients to combine into a dough.
- Cover and place the bowl in the fridge to set for 30 minutes.
- Remove from fridge and scoop out with a tablespoon to a cookie sheet covered with parchment paper. Makes about 12-14 cookies.
- Place in the oven for 15 minutes.
- Allow to cool down.
- While it’s cooling you can melt the chocolate au bain marie with the other glaze ingredients.
- Once cookie is cooled you can drizzle the chocolate glaze over the cookies. Or create fun shapes. Let it set and enjoy.
