Turnip Apple Salad

After a weekend of activities, I always go for something easy on Monday. No fuss, no hassle, just slice and toss a few ingredients together and I’m good to go. Looking forward to a hopefully nice warm summer this will be a refreshing salad for any hot summer day.

I have a thing with salads, I feel for the longest time we got presented with this picture that salads are only green leaves and are boring to eat. I refuse to accept that and have made it my mission in life to discover as many new vegetables as possible and use them in the most creative way.

We should all get excited about the food we are about to eat and thinking of your salad as boring should not be something that is crossing your mind as you’re about to eat. This is something that doesn’t only hold up to salads, but all veggies in general. Gone are the days of boring, flavorless steamed broccoli, instead try some cauliflower steak with BBQ sauce or turnip salad with yogurt dressing, what about endive and orange salad, don’t forget about the garlic roasted radish. These are just a few of the options we have on the blog now and we will continue adding to it, because it’s fun to create recipes for myself and that hopefully you will enjoy as well. Ingredients

  • 250 gram turnip sliced
  • 1 apple quartered and sliced
  • 1 bunch parsley chopped
  • ½ cup citrus vinaigrette

Instructions

  • It’s as simple as a chop and toss. Nothing more, nothing less.
