Summer Fruit Salad with Honey Mint Dressing

Ooooh how I love summer, there are so many fruits available now so I simply had to make a summer fruit salad. I love to see all the colors in my bowl, it is like tasting the rainbow (the natural way, not the artificial way, if you know what I mean). Just look at all the colors, don’t you just want to have it all?

I remember growing up my mom used to make this salad, and yeah for me it was just a fruit salad not necessarily a summer fruit salad because it’s always summer in Curaçao. But she used to sneak a little bit of prosecco in it and it was so decadent. Mind you this would only happen once or twice a year. My version is without any prosecco but that doesn’t make it any less decadent.

For a fruit salad you can basically use any fruit combinations you have available. There are just a few fruits I try to steer away from because they oxidize and it becomes less appetizing. I’m talking about apples and bananas, the apples will oxidize and turn brown and bananas will become softer and softer, which is a consistency I can’t appreciate in a fruit salad. Besides those two I think anything goes. I try to pay attention to the level of sweetness when putting it together and the consistency of each fruit, to create a good balance. For example, instead of the grapefruit you could add an orange, or instead of the melon substitute with pineapple. There is a myriad of options all depending on what you have available in your region.

The dressing for this fruit salad will complement all types of fruit and the mint makes a nice addition. Another thing I love about the dressing is that, sometimes you get a fruit in there with less flavor, in my case now it was the nectarine, but the dressing is so flavorful that it brings everything together and you don’t even notice it anymore. Summer Fruit Salad with Honey Mint Dressing

Ingredients

Fruit Salad

  • ½ melon
  • 3 nectarine
  • 3 plum
  • 1 mango
  • 1 cup blueberries
  • 1 cup strawberries
  • 1 grapefruit

Honey Mint Dressing

  • 1 lime zest and juice
  • ¼ cup honey
  • 1 tsp vanilla
  • 1 handful mint leaves thinly sliced

Instructions

  • Clean all fruit and dice in equal sizes. (except blueberries)
  • Place all diced fruit in a big bowl.
  • In a small bowl mix all ingredients for the dressing and gently mix to break up the honey and incorporate everything together.
  • Pour dressing over fruit and mix everything together and you are ready to serve.
