Red Cabbage, Carrot and Apple
Combining red cabbage, carrot and apples with onions and some fresh herbs delivers a deliciously filling salad. And it doesn’t stop there, it’s a feast for your eyes with all the autumn colors mixed together in a bowl. Serve this salad immediately with a nice slice of grilled, roasted meat. It’s great with grilled halloumi cheese and sun-side-up eggs too.
Tip:
To save time you can buy grated vegetables. And lower the prep time to be done even faster!
Cabbage
Cabbage is the perfect winter vegetable as it’s available from late autumn to early spring. It’s no wonder you can find it in so many recipes during this period. There are several types of cabbages. For this particular recipe I used red and green cabbage and they are served raw. But there are numerous ways you can prepare cabbage. You can steam them, stew, sauté, braise and even pickle cabbage. I’ve also made a braised red cabbage with duck confit before. And you can find fermented cabbage in my Transylvanian cabbage. I think it’s very hard to find a country that doesn’t use cabbage in their cuisine. You have Korean kimchi, German Sauerkraut, American coleslaw, Irish colcannon just to name a few. The Health Benefits
While cabbage is low in calories it is packed with nutrients like, vitamin K, C, folate, manganese and vitamin B6. Which help to regulate the nervous system and energy metabolism. Cabbage being part of the cruciferous family helps to lower inflammation in the body. And also helps to improve digestion. However excessive consumption can lead to increased intestinal gas which causes bloating. You have trisaccharide raffinose to thank for that. Unfortunately, the stomach and small intestine are not able to digest this. We are then saved by a bacteria in the large intestine that ferments this compound. So remember everything in moderation.
Cooking with Cabbage:
Red Cabbage, Carrot and Apple salad
Ingredients
- 300 gram red cabbage grated
- 200 gram green cabbage grated
- 250 gram carrot grated
- 1 red onion finely sliced
- 1/2 apple finely sliced
- 1 handful coriander leaves shredded
- 1 handful mint leaves shredded
Dressing
- 3 tbsp hazelnut or olive oil
- ½ lemon juice
- 1 lime juice
- 1 tbsp honey
- ¼ tsp chilli flakes
- ½ tsp salt
Instructions
- Mix all ingredients of the dressing in a small bowl.
- Put cabbage, carrot and onion into big bowl. Pour the dressing over the salad and mix it very gently.
- Add mint, coriander and mix it again, then sprinkle with the apple.
- Serve it with grilled or roasted meat. It’s delicious with halloumi cheese and sun-side-up eggs too.
