Pomegranate Banana Breakfast Bowl

Quick, easy and healthy

It’s quick, easy, healthy and of course yummy! A lot of people don’t have enough time in the morning before going to work. And it is easy to say wake up earlier. But some people, like me, don’t like to wake up very early. This breakfast might just be perfect for them. Including healthy ingredients and to top it off it only takes a few minutes to make. Bananas, pomegranate, almond milk, chia seeds, cinnamon and honey, that’s it! And you have yourself a quick, easy, healthy and yummy breakfast.

 

Pomegranate

You know, our mission is to use as many seasonal fruits and vegetables as possible when cooking. Pomegranate is typically in season in the Northern Hemisphere from September to February. Pomegranate is characterized by its versatile use. This fruit contains hundreds of edible seeds what are covered with red and juicy arils. You can eat the whole arils including the fiber-rich tiny seeds. Usually when we are talking about pomegranate seeds, we mean seeds and aril together.

Seeds are used in baking, cooking, juice blends, meal garnishes, smoothies, and alcoholic beverages, such as cocktails and wine. You can add them to anything you like. I really like to eat pomegranate raw. I use the seeds very often in salads, check my Tabbouleh and Thai Turkey Meatball recipe. We also like using pomegranate molasses, you can find it in the Pan Roasted Endive with Gremolata and Muhammara. I used pomegranate vinegar together with molasses in the Lemon Chicken with Beetroot and Feta Salad.

This fruit contains important vitamins and minerals. It is a rich source of vitamin C and vitamin K. Pomegranates are also a good source of folate, copper, vitamin B6. And it is very healthy to eat them raw.

Pomegranate Banana Breakfast Bowl

Equipment

  • Blender or Food processor

Ingredients

  • 1 big pomegranate
  • 3 big bananas
  • 1 tbsp honey
  • 1 tbsp chia seeds
  • 50 ml almond milk
  • ½ tsp cinnamon
  • 2 pinches salt
  • 1 handful pistachio crushed

Instructions

  • Take out the pomegranate seeds and put them into blender, except 1 handful which is needed for the decoration.
  • Add 1 tbsp honey and 1 pinch of salt, blend it for 3 minutes.
  • Pass pomegranate mixture through a fine sieve to a bowl.
  • Add 1 tbsp chia seeds to the mixture and leave to rest for 10 minutes, until chia seeds swell and the mixture a bit thick.
  • Rinse the blender and put 2 ½ bananas, almond milk, cinnamon and 1 pinch of salt in it. Blend until it’s smooth.
  • Pour smooth banana mixture into serving bowl, spoon pomegranate chia seed mix to the top, make swirls.
  • Slice the remaining half banana and place to the top of the bowl, sprinkle with the remaining pomegranate seeds and crushed pistachio. Enjoy!
