Flavorful Zucchini

Delicious zucchini fritters made with pumpkin seed flour. Granted not a lot of people are a fan of zucchini because they see it as a boring and tasteless vegetable. I have to agree with this assessment, it can be a little tasteless. But the most important factor is seasoning. And with a little bit of creative seasoning you can make zucchini taste delicious. The Pumpkin Seed

There are so many things you can do with pumpkin. But for today I’m focusing on pumpkin seeds. Even the seeds can be found everywhere. We use them in salads, as yogurt our soup topping and even in smoothies. They are an excellent snack and it’s always good to have a little bag at the office or in the car when you need a little pick me up. Just last week Kyara made a cracker with pumpkin seeds as well.

But once the seeds have been ground you get a flour. And it’s a great substitute for people with gluten intolerances. To get the flour it goes through a process in which the oil is cold pressed mechanically from the seeds without any chemicals. After this the seeds are ground into a flour. One way you can immediately recognize pumpkin seed flour is by its green color. It also has a unique taste and aroma.

 

Pumpkin Seeds: the Benefits

Pumkin seeds have so many benefits I don’t know here to start. They are rich in nutrients, contains unsaturated fatty acids, are rich in vitamins, functions as a diuretic and is anti-inflammatory. Pumpkin seeds are also extremely rich in minerals such as sodium, calcium, magnesium, selenium, iron, zinc, copper and manganese.


Paleo Zucchini Fritters with Pumpkin Seed Flour

Ingredients

  • 300 gram zucchini grated
  • 60 gram pumpkin seed flour
  • 3 large eggs
  • 2 cloves garlic minced
  • 1 tsp salt
  • ¼ tsp pepper freshly ground
  • 4 tbsp olive oil or coconut oil, goose fat, duck fat for frying

Instructions

  • Cut zucchini in half and remove the seeds if they are big. If you buy fresh, young zucchini, most of the time you do not have to deseed it. Grate it with vegetable greater! (It has bigger holes than cheese grater.)
  • Add ½ tsp salt to the grated zucchini and leave to rest for 5 minutes.
  • Push the water out from the grated zucchini by hand (or use cheese cloth, but it’s not necessary).
  • Add eggs, garlic, pumpkin seed flour, ½ tsp salt and ¼ tsp freshly ground pepper and mix it well, but gently.
  • Heat oil or fat in a frying pan. Put 4 zucchini balls (use tablespoon) to the pan and fry on medium high heat for 2-3 minutes. Turn and push them a bit (they look like an American pancake) and fry the other side for 2-3 minutes too. It’s ready when both sides are golden brown. Repeat this with the other half of the mixture. You will get 8 fritters.
  • Serve with salmon, any smoked fish, avocado or pate. Enjoy!
