Olive Oil Sheet Cake with Raspberry Swirl

No Fuss Sheet Cake
I love a good sheet cake. It’s super easy absolutely no fuss, gets done in no time. What’s not to like. To make it a little bit special I made an olive oil cake with a raspberry swirl on top. The raspberry swirl is like painting an art piece, you get to be creative and make your own beautiful pattern. I do explain in the instructions how to make the same one pictured. But you can basically let your inner artist lose and have fun.
Olive Oil
Usually oil is added in cakes to retain moisture and keeping it nice and fluffy. If for example compared to butter or ghee, olive oil cakes stay soft at all times. The butter in cakes make it turn stiffer once it’s has been cooled in the fridge. Meaning that if you want to really enjoy your cake you will have to wait a few minutes for it to soften after taking it out of the fridge. With olive oil cakes you won’t have that problem as it stays soft. So, it’s a grab and enjoy immediately.
Tip!
Choose a mild tasting olive oil so it doesn’t overpower the other flavors in the cake.
Bake a Cake Save a Marriage
I made this cake a few days before we started our road trip and it’s perfect to take on the road. It’s already been cut into slices. Making it easy to grab and keep going. We actually prepped all the food to take with us while driving so we didn’t have to get gas station food. The hard part was not to eat everything before we left the house. Definitely had to contain myself. Also heard my cake caused some minor problems with our friends/neighbors.
Let me explain. I’m pretty close with my neighbors. So, whenever I’m trying out a new recipe I bring over a piece to get feedback. Is it ready to post? Am I missing something? Or with savory items, is it too spicy? Etc. etc. When I made this cake, I had to share with them as well. My friend had her piece and shared a little with her husband, but then proceeded to take the other piece (what I would consider his piece) to work the next day. Since all of this went down in our group chat I had a front row seat when he discovered she left for work and the cake was gone. Which turned into a funny exchange of GIFs. I was urged to put this up as soon as possible so they can make their own and have peace again.

Olive Oil Sheet Cake with Raspberry Swirl
Equipment
- Blender or Immersion blender
Ingredients
Olive Oil Cake
- 2½ cup almond flour
- ¾ cup tapioca
- 1 tsp baking soda
- ¼ tsp salt
- ¾ cup honey
- 1/3 cup olive oil
- ¼ cup lemon juice
- 3 eggs
Raspberry Swirl
- 200 gram raspberry
- 1 tbsp coconut sugar
Instructions
- Preheat the oven to 163°C.
- Prep a baking sheet with some coconut oil and parchment paper. Mine is about 39x27 cm.
- With an immersion blender blend the raspberry with coconut sugar into a cream. Pass it through a sieve to get rid of all seeds and set aside.
- Mix all the dry ingredients in a large bowl.
- Whisk all the wet ingredients together.
- Mix the wet and dry ingredients together well to make sure there are no flour pockets left in the batter.
- Pour batter onto baking sheet and give it a little shake to even out the batter over the surface.
- Pour the raspberry over the batter and make a nice pattern on top. I poured 4 lines over the horizontal and with the backside of a knife tracked up and down vertically to create a pattern. But you can do anything you want.
- Place in the oven for 20 min.
- Allow to cool down a bit before cutting and serving. Cut into squares enjoy and save the rest for a little snack later.
