Jacket Sweet Potato with Carne Molida

Jacket potato was made to be filled with some goodies any goodies will do but for today it’s going to be minced meat or carne molida as I grew up with. It has just a little bit of a kick to it which pairs nicely with the sweetness of the sweet potato. The recipe calls for an already made portion of jacket potatoes so be sure to make those ahead or pop them in the oven while you prep the carne molida.

This particular spice blend reminds me of home and the way my mom would just throw a little bit of this and a little bit of that and it would turn out just right. It’s almost impossible to get one of these recipes down, because exact amounts are rarely given. Somehow, I managed to recreate this, doubt it’s the exact way my mom makes it but flavor wise it comes pretty close. There you have it carne molida that makes me nostalgic for home.

Ingredients

Jacket Sweet Potato

  • 1 large sweet potato per person
  • salt and pepper

Carne Molida

  • 400 gram ground beef
  • 4 cloves garlic minced
  • 1 large onion finely chopped
  • 1 red bell pepper chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • ½ tsp red pepper flakes
  • 2 tbsp coconut oil
  • dairy free sour cream

Instructions

Jacket Sweet Potato

  • Preheat the oven to 200C.
  • Scrub the sweet potatoes and stab them with a fork a few times.
  • Wrap them in a sheet of parchment paper or aluminum foil.
  • Put them into the oven on the grid and bake for 55-60 minutes.
  • Check them by stabbing with a ducktail needle, if it goes through easily, they are ready, if it does not, bake for another 8-10 minutes and check again.
  • Let cool for 10 minutes before cutting.

Carne Molida

  • Melt coconut oil in a large pan and add the onion to cook for 3-5 minutes until it has become translucent.
  • Add the garlic to cook for about 1 minute.
  • Add the bell pepper, salt, black pepper, paprika, cumin, oregano and pepper flakes to cook for another 5 minutes.
  • Add the ground beef and break it up while mixing it for 5-7 minutes until cooked through.
  • Grab your already baked jacket sweet potatoes and make an incision to the top, be careful not to slice all the way to the bottom otherwise all the juices will seep out.
  • Fill the sweet potatoes with the minced meat and top with a dollop of dairy free sour cream. Enjoy!
