Immune-Boosting Smoothie

When you’re using leftovers the most beautiful creations emerge. This immune-boosting smoothie tastes like a cross between carrot cake and piña colada and if that doesn’t sound like heaven to you I don’t know what will.

The ginger is anti-inflammatory for your body and curcuma/turmeric helps to detoxify your liver while also being anti-inflammatory. You can either use fresh curcuma or dried, at this point I had dried at home so that’s what I used. Simply blend and enjoy! You can also make this as a drink for a nice brunch with friends once we are done with social distancing, in the meantime give your immune a boost.

Equipment

  • Blender

Ingredients

  • 2 medium carrots grated
  • 5 cm ginger grated
  • 1 cup frozen pineapple
  • 2 oranges peeled and cut into chunks
  • 1 tsp curcuma/turmeric
  • 1 cup coconut water
  • 1 cup coconut milk

Instructions

  • Add all ingredients to blender and mix well.
  • Serve and enjoy!
