Garlic Roasted Radish

A little snack, a side dish, or a delicious addition to your salad. However, you decide to put these into play you won’t be disappointed. These days I’m feeling the easy recipes, not a lot of hassle with optimal results and still nutritious. So, I’ve been leaning more towards these light, but filling sides that I can add to my salad or just enjoy as a snack.
Radish is an edible root vegetable mostly eaten raw and most people don’t know they’re also delicious when roasted. Radish has been known to help cleanse your liver and stomach and is high in fiber which improves digestion.
If you’ve been paying close attention you know all my recipes have a minimum requirement of at least 4 garlic cloves whenever I’m using garlic. With one exception being made when I’m using it fresh, because it will overpower the entire dish. You might know that garlic tends to burn quite fast, that’s why I lowered the oven to 180C instead of 200C or above. The garlic will crisp up just enough and not burn. If you don’t want to take any risks you can add them the last 10 minutes in the oven.
I just added the radishes to my salad with a dollop of guasacaca because in our household we can’t get enough of it and like I said it goes on everything.

Garlic Roasted Radish
Ingredients
- 250 gram radish
- 4 cloves garlic
- 3 tbsp olive oil
- salt
- fresh black pepper optional
Instructions
- Preheat oven to 180C.
- Mince the garlic, wash and clean the radishes and cut them in half.
- Add the radishes with garlic and olive oil on a baking tray and coat all the radishes with olive oil and garlic, you might possibly need more olive oil.
- Add salt to the top and place in in the oven for 20 min. Place the tray in the top half part of the oven for optimal roasting.
