These chicken fajitas will be the easiest no fuss diner you’ll ever encounter. Simply slice everything and throw it in the oven for 25 minutes and dinner is served. Whether you’re rushing to get a midweek dinner on the table or simply being lazy on the Sunday not feeling like doing much, this will be your go to recipe.

I remember the first time I had this, I was in high school and went over to a friend’s house. As soon as I got home I explained this to my mom and wanted to recreate it. I loved the idea of using a butterhead lettuce leaf as a tortilla. Writing this brought up other food memories of the first time I had chicken and chocolate, so I’ll be working on that and sharing soon.

If I have a choice between chicken breasts and chicken thighs, I’ll always choose thighs because they have more flavor and are juicier. I’m a chicken thigh fan. The simplicity of this dish allows for quite a few different toppings, depending what you have at hand or what you feel like. I’m just going to list a few, but feel free to get creative with your toppings: guasacaca, lactose free cream cheese, grated cheese, avocado slices, lime, coriander.

Ingredients

Chicken Fajita

  • 500 gram boneless chicken thighs
  • 1 butterhead lettuce
  • 1 red bell pepper sliced
  • 1 yellow belle pepper sliced
  • 1 large onion sliced
  • 1 tsp chili
  • 1 tsp paprika powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper
  • ½ tsp ground cumin seeds
  • ½ tsp ground coriander seeds
  • ½ tsp salt
  • 2 tbsp olive oil

Optional Toppings

  • lactose free cream cheese
  • guasacaca
  • grated cheese
  • sliced avocado
  • fresh coriander
  • lime juice

Instructions

  • Preheat oven to 200°C.
  • Clean and cut chicken into strips.
  • Place the chicken, bell peppers and onions on a baking sheet.
  • In a small bowl mix all the spices, salt and olive oil and pour mixture over chicken, bell peppers and onion.
  • Toss everything together to evenly coat with mixture and spread it out on the baking sheet to make sure the chicken pieces are not overlapping each other.
  • Place in the oven for 20-25 min. Half way through toss ingredients again and spread out to get an even crisp on both sides.
  • Just before the chicken is done, wash some leaves from the butterhead lettuce.
  • Fill each individual lettuce leaf with chicken fajita and toppings of your choosing. Wrap it up like a tortilla and enjoy.
