Let me tell you, tasting this cheesy endive is like having a grilled cheese sandwich but then on an endive. Absolutely yuuum! It might not be dairy free but it’s still gluten free. You win some you lose some. Try not to be so hard on yourself. Unless having dairy impacts your healthy gravely. Have a little fun with it. At least that’s how I feel. Combining 3 different types of cheeses gets you that beautiful cheesy pull. And by putting it on the ventilated grill function it cooks the endive while simultaneously getting a nice crust on top of the cheese.

Tip!

Make your own combination of cheese with your favorite cheeses. The only thing you need to pay attention to is that the total reaches 1 cup.

Cheesy Endive Side Dish

Ingredients

  • 2 Belgian Endives
  • ½ cup old cheese grated
  • ¼ cup mozzarella cheese grated
  • ¼ cup parrano cheese grated
  • 1 tbsp cream cheese either lactose free or just normal
  • 1 tbsp whole grain-mustard
  • 1 tbsp olive oil

Instructions

  • Preheat the oven to 200°C on the ventilated grill stand.
  • Remove the outer leaves from the endive, wash and pat dry.
  • Slice the endives in half, place on a baking tray and drizzle with olive oil.
  • In a bowl mix together the different cheeses together with the mustard.
  • Divide and spread the cheese over the sliced endives.
  • Place in the oven for 12 minutes.
  • Remove and enjoy your cheesy side dish
