Cashew Flour Is Basic in Paleo Baking and Cooking

It’s delicious, easy to prepare, can be stored in airtight container for a long time. But I couldn’t figure out how long, because it always runs out fast.
I really like to use cashew flour for baking. It’s one of the best ingredients of gluten-free cookies and cakes. The taste of cashew flour is not aggressive and does not suppress other flavors, and harmonizes very well with all other components. This cookie can also be made with almond flour, hazelnut flour and tigernut flour, but the taste of those flours is stronger. The amount of ingredients in this reciepe refers to cashew flour.

Cashew Flour Chocolate Chip Cookies
Ingredients
- 240 gram cashew flour fine
- 1 tsp baking soda
- ¼ tsp salt
- 1 large egg
- 60 gram coconut sugar
- 100 ml ghee or coconut oil, melted
- 1 tsp vanilla extract
- 60 gram chocolate chips pure 85%
For decoration (optional)
- 60 gram chocolate pure 85%, melted
Instructions
- Preheat the oven to 175 °C. Line a baking tray with parchment paper.
- Combine cashew flour, baking soda and salt in a bowl.
- Mix egg, coconut sugar, melted ghee and vanilla by electric mixer in another bowl.
- Add egg mixture to the mixed dry ingredients. Combine by electric mixer.
- Fold in the chocolate chips by kitchen spoon.
- Scoop the dough by cookie scooper or teaspoon (heaped teaspoon) onto the baking tray. The scoops should not be very close to each other because they spread out during baking. I used 2 baking trays.
- Gently press the tops of the scoops a bit.
- Add some extra chocolate chips to the top and bake for 10 minutes.
- Leave the cookies to cool on the baking tray for 10 minutes before transferring them to a cooling rack. This is important, because they have to set and cool before you move them. Otherwise they will be broken.
- Chocolate decoration is optional. Melt 60 gram chocolate. Pour to small piping bag, cut a small hole on it and decorate the top of the cookies. Leave to harden the chocolate. Enjoy!
