Little Balls with Great Taste

These little gluten and dairy free almond balls with 3 different coatings are one of the most popular desserts of my friends. Almond flour and almond extract give a bit of marzipan flavor to them. Matcha, cocoa and coconut give also an extra taste and colors to these balls. The colors are also very important for me, especially on rainy days. The coastal part of the Netherlands where I live, is not cold in winter, but rainy and grey. Colors make me happy.

Gluten and Dairy Free Ingredients with Honey

All ingredients of this recipe are paleo friendly. Most of the paleo recipes contain almond or coconut flour, they are basic ingredients. Almond milk and other nut milks are also part of the paleo diet.

Honey is controversial. Strict followers of the paleo diet avoid it because of the fructose content of honey. I use honey instead of refined sugar because its health benefits are remarkable. Honey is a whole food, powerful all-natural antibiotic. It doesn’t mean that honey is a cure-all for bacterial infections but improving the healthy immune response.

Not a big amount but 10% of the sugar in honey comes from a group called oligosaccharides. The main benefit of the oligosaccharide is their prebiotic activity: they provide food for your gut flora and increase the number of beneficial lactobacillus bacteria. This is an advantage. But honey could make allergic reaction for some people. Pay attention to the reaction of your body, this is important every time.

Easy to Make

These almond balls are really easy to make. Melt the honey in the almond milk then mix with other ingredients in a bowl. Add a bit more coconut flour if it’s too wet or add more honey and coconut oil if it is not sticky enough, there could be difference between the different flour brands. Its consistency is good when you can form balls from it. The trick is that the mixture needs a short rest in the freezer, so it is much easier to form balls.

Tip!

Put the almond flour mixture into the freezer for short rest, so it is much easier to form balls after it.

Ingredients

  • 60 ml almond milk
  • 2 tbsp honey
  • 100 gram almond flour
  • 20 gram coconut flour
  • 20 gram coconut oil melted
  • ½ tsp cinnamon ground
  • ½ tsp almond extract
  • 1 pinch salt
  • Cocoa powder matcha tea powder, desiccated coconut for coating

Instructions

  • Heat milk with honey in a small pan on low heat until honey is melted.
  • Mix the other ingredients in a bowl (except the coating’s ingredients).
  • Add milk and honey mixture to the bowl and knead by hand. Its consistency is good when you can form balls from it. Add a bit more coconut flour if it is too wet or add more honey and coconut oil if it is not sticky enough. There could be difference between the different flour brands.
  • Put it into the fridge for 1 hour or into the freezer for 15-20 minutes before shaping the balls. It has to be a bit harder for easy shaping.
  • Put cocoa powder, matcha tea powder, and desiccated coconut into small bowls.
  • Make same size balls and roll them into the different coating.
  • Enjoy!
